Arrive Istanbul (IST). Transfer to Sultanahmet boutique hotel. Evening walk: Sultanahmet Square, the 4th-century Hippodrome, a view of Hagia Sophia and Blue Mosque across the park. Dinner at a rooftop meyhane overlooking the Golden Horn.
Morning: Hagia Sophia (now a mosque again, 6th century Byzantine masterpiece), Blue Mosque (Sultan Ahmed Mosque, 6 minarets), Basilica Cistern. Lunch of iskender kebab. Afternoon: Grand Bazaar (4,000 shops in covered lanes), Spice Bazaar. Evening: Turkish hammam at Cagaloglu.
Morning: Topkapi Palace (Ottoman sultans' residence), the Harem (separate ticket), the Treasury with the Spoonmaker's Diamond. Lunch at Eminonu fish sandwiches by the pier. Afternoon: Bosphorus private cruise โ Dolmabahce Palace, Ortakoy Mosque, Rumeli Fortress. Evening in Kadikoy on the Asian side for the best meze and the vintage bars of Moda.
Morning flight to Kayseri or Nevsehir (1h 30m). Transfer to Goreme โ sleep in a cave hotel carved into fairy-chimney rock. Afternoon: Goreme Open-Air Museum UNESCO, the painted Byzantine cave churches. Evening: sunset at Uchisar Castle, dinner in a Cappadocia wine cellar (the Kapadokya vines are 6,000 years old).
Pre-dawn pickup for a 1-hour hot-air balloon ride โ 100+ balloons floating over the fairy chimneys at sunrise. Champagne breakfast on landing. Afternoon: Kaymakli or Derinkuyu Underground City (8 levels deep, once housed 20,000 people). Evening: whirling dervish ceremony (Mevlevi Sama).
Morning drive or short flight via Denizli. Afternoon at Pamukkale โ the 'Cotton Castle' white travertine terraces filled with turquoise thermal pools. Hierapolis ancient Greco-Roman spa city on the hill. Bath in the Antique Pool where Cleopatra swam (or so they say) โ Roman columns on the pool floor.
Drive to Selcuk (3 hrs). Ephesus archaeological site โ the Library of Celsus facade, Great Theatre (25,000 seats), terrace houses. House of Virgin Mary optional. Afternoon flight from Izmir (ADB) to Istanbul or direct home.
